Dried Tomatoes

Hi Susan,

Can I make dried tomatoes without a dehydrator? I love sun-dried tomatoes but they're so expensive. I use them on sandwiches and pizzas.

Hi Linda, yes! You can use your regular oven set at its lowest setting - on a baking rack, cover it with parchment paper, then place slices of tomato on top of it.

Many people like to keep the oven door propped open with the handle of a wooden spoon for better air circulation.

And then there's the actual "outdoor" method of sun drying!

You may also consider using your air fryer if you can set it really low. What's low? The perfect drying temperature for veggies is at 135°F. I know folks dry foods at 180°F but that could result in case hardening which means you get an outer crust and leaves the centers moist.

But for slices of tomatoes, you're fine to dry them at a slightly higher temperature.

Also, on my "strawberries" page here, I mention a woman who uses her Ninja Foodi to dehydrate food! She purchased a special stacking rack so she could dehydrate more in the same sitting, if you will.
