Do You Have to Peel Carrots Before Drying Them?

Do I have to peel my carrots before I slice and dry them? What happens if I leave the skin on? I know I have to wash them first. Thanks!

Hi Luna, more often than not I do peel carrots; having said that, I do know people who leave skins on when doing a rough chop for a vegetable soup, for instance.

Another reason you "could" leave the skins on is if/when you're making a carrot soup and you KNOW you're gonna use an immersion blender - that would take care of any visible carrot skin!
